What is gluten?
Gluten is a family of proteins found in grains, including wheat, rye, spelt, and barley. When flour mixes with water, the gluten proteins form a sticky network that has a glue-like consistency. This glue-like property makes the dough elastic and gives bread the ability to rise during baking. It also provides a chewy, satisfying texture.
Most people can tolerate gluten without any issues. However, it can cause problems for people with certain health conditions. This includes celiac disease, gluten sensitivity, wheat allergy, and some other diseases. Celiac disease is the most severe form of gluten intolerance, it affects about 1% of the population. It is an autoimmune disorder (not an allergy!) in which the immune system attacks the gluten as a foreign invader. This process damages the gut wall and may cause severe health issues. For this group it is absolutely crucial that no cross-contamination takes place as the tiniest speck of gluten can damage the gut wall. Many people do not test positive for celiac disease but still benefit from a gluten-free diet. People suffering from IBS (irritable bowel syndrome), hormonal imbalance and other health issues can benefit from a gluten-free diet.
Cross-contamination or cross-contact is when a gluten-free food or food product is exposed to a gluten-containing ingredient or food – making it unsafe for people with celiac disease to eat. Even just a crumb of gluten is enough to start the autoimmune response in people with celiac disease. There are many obvious (and not-so-obvious) sources of cross-contact at home and in food service locations.
